Boozy and Non-Boozy Dole Whip Fizz

In honor of the first ever National Dole Whip Day (because I am a big ole Disney nerd, if you didn’t already know), I felt like it was important to whip up (see what I did there) a Dole Whip-inspired cocktail.

And also to put tiny Minnie ears on my chicken.

Mission accomplished.


BOOZY DOLE WHIP FIZZ

Makes 1 serving.

Ingredients:

  • Approx. 1/2 cup frozen Dole Whip Pineapple Soft Serve mixture, prepared as per package instructions (see guidelines below)

  • 1 oz. spiced rum

  • 1 oz. golden rum

  • 1/2 oz. Pineapple Jam Syrup (1:1 ratio of pineapple jam mixed with hot water until thoroughly dissolved, then cooled)

  • 1/2 oz. fresh lime juice

  • Approx. 2 oz. pineapple-flavored sparkling water (such as Perrier), to top

    • To make the Dole Whip mixture, you need to get your hands on a bag of The Mix, and you’ll also need an ice cream machine. The instructions on the bag are going to be a little bit daunting because they want you to make the ENTIRE bag. But to break it down into more human-scale measurements, the generally accepted ratio is 1 cup of mix to 3 cups of water. And if you want to make an extra creamy version, substitute one of those cups of water with milk of your choice (coconut is quite yummy).

    • Mix up the mixture and water and then pour into your ice cream machine and let it run until it gets nice and thick and creamy (this can be anywhere up to 50 minutes!)

    • Scoop the frozen mixture into a gallon plastic bag and then snip the corner of the bag off—this gives you kind of like a pastry piping bag and allows you to squeeze the mixture out in an almost soft-serve type manner.

  • To make the cocktail:

    • Pipe approximately a 1/2 -3/4 cup soft serve mixture into a highball glass

    • Add lime juice, rum, and then top with sparkling water.

    • Spoon Pineapple Jam Syrup over the top

    • Garnish with fresh pineapple leaves or a slice of lime

DOLE WHIP FIZZ MOCKTAIL

Makes 1 serving.

Ingredients:

  • Approx. 3/4-1 cup frozen Dole Whip Pineapple Soft Serve mixture, prepared as per package instructions (see previous instructions)

  • 1 oz. Pineapple Jam Syrup (1:1 ratio of pineapple jam mixed with hot water until thoroughly dissolved, then cooled)

  • 1 oz. fresh lime juice

  • Approx. 2 -3 oz. pineapple-flavored sparkling water (such as Perrier), to top

    • Pipe Dole Whip Soft Serve into a highball type glass, then add lime juice, and top with sparkling water. Spoon Pineapple Jam Syrup over the top and garnish with pineapple, cocktail cherries, and pineapple leaves.
