Spicy Pineapple Mojito

One of my most favoritest people on the planet is my gorgeous friend, Brooke, whom I love for many, many reasons but also because she always shows up ready to match me glass of rosé for glass of rosé (or whatever cocktail we happen to be into at that moment). Not only that, but she often comes armed with a batch of her family's secret recipe Pineapple Habanero jam. It's so good, you guys. It hurts sooooo good.

I knew pretty much immediately that I had to have it in a cocktail.

So here ya go:

To make one cocktail:

  • 5 fresh pineapple mint leaves, plus one sprig for garnish

  • juice of 1/2 a lime

  • 5 small cubes of fresh pineapple

  • 1 tbs. pineapple habanero jam (and if you don't have a Brooke in your life, first of all, I'm deeply sorry for you, second of all, try using regular pineapple jam and crushing a few pieces of habanero into the muddling part of the drink process).

  • 1 1/2 oz. light rum

  • 1 1/2 oz. fresh pineapple juice

  • sparkling wine to top (about 1/2 cup)

In the bottom of a collins glass (or something tall and skinny-ish), add your mint leaves and muddle gently just until you get hit with the fragrance. Add your pineapple chunks and lime juice and muddle again (just until pineapple chunks are broken down). Add the pineapple jam, rum, and pineapple juice. Give it a good stir then fill the glass with ice. Top with sparkling wine (I used sparkling rosé), and stir to mix. Top with mint sprig and any other fun garnish you might have (I also added two craspedia flowers because they cute).


Beware lurking chickens and their ability to jump long distances...

*Don't let your chickens near beverages that you actually plan on putting in your mouth. Because: germs.
