The Suburban Jungle Bird
Also known as The 'Burb Birb.
The classic Jungle Bird cocktail is a pretty great little tiki drink that includes dark rum, Campari, lime and pineapple juices, and simple syrup. But I can never leave well enough alone.
Also, I've realized I need to start growing pineapples in my yard. I use them a lot. I need them for garden-to-glass tiki. It's important.
THE SUBURBAN JUNGLE BIRD
Makes one cocktail.
1.5 oz. dark or dark spiced rum (I used Malahat Spirits Black Tea Rum)
1.5 oz. pineapple juice
1 oz. Campari
1 fresh egg white
.5 oz. lime juice
.5 oz. honey simple syrup (instructions below)
Pineapple wedge/greens, lime slice, flowers--whatever you've got to make a ridiculous tiki garnish with. Tiki is not the time to be lazy with your garnish.
To make the simple syrup, combine equal parts boiling water and organic honey. I used 2 oz. of each. Stir until honey is dissolved, let cool, and store in fridge until ready to use.
To make this here cocktail, combine rum, pineapple juice, Campari, lime juice, and simple syrup in a shaker over ice. Shake until very chilled. Strain ice from mixture. Add egg white to mixture and shake in previously chilled shaker vigorously for about 20 seconds. Pour mixture into glass (don't strain-you want allllllll that glorious foam), and garnish the hell out of it.
