If there's one thing I can say about these darned chickens, it's that they really forced my hand at implementing organic gardening practices. And I'm not mad at it. At all. Don't get me wrong--it's a lot of work, but I have come to take a lot of pride in the fact that our little garden is a safe space for not only us, our pets, and all our little pollinator frands, but also for my cocktail ingredients. PRIORITIES.

So I get really, really excited when I find products that are truly organic--most especially when we're talking about spirits--because there just aren't very many of them. Prairie Organic really puts the work and the heart into ensuring that their products are not only completely chemical free, but of uncompromising quality from start to finish. That means, their farmers are often, quite literally, out there in the field pulling weeds with their bare hands, amongst other sustainable weed-control practices. AND BOY DOES THIS RESONATE WITH ME--it ain't easy crawling around in the garden, but it's definitely worth it. I find it remarkably impressive that this is the work ethic that Prairie and its suppliers put into growing their ingredients.

So when they reached out to me to create an organic, garden-fresh cocktail with their pretty little bottle of farm-crafted gin, I dove right on in.

Petal Pink Gin Fizz

Makes one serving.

  • 2 oz. Prairie Organic Gin

  • 1 oz. fresh-squeezed lemon juice

  • 1 oz. Rose Petal-Hibiscus Syrup (instructions below)

  • 1 organic egg white

  • 1 oz. seltzer water

  • organically-grown rose blossom, and a pinch of loose hibiscus tea for garnish

Rose Petal-Hibiscus Syrup

Makes approximately 1 cup.

  • 1 cup water

  • 1 cup organic cane sugar

  • 2 cups fresh organic rose petals

  • 1 teabag organic hibiscus tea

Place all ingredients in a small saucepan over medium hight heat and bring to a boil. Reduce heat and simmer for five minutes or until sugar has dissolved completely. Remove from heat and let cool. Strain contents into airtight container and store in fridge (for up to a week).

To make the cocktail. Combine gin, lemon juice, and simple syrup in a shaker with ice. Shake until well-chilled. Quickly strain ingredients into a separate glass, dump ice from shaker and place cocktail back into shaker, adding the egg white. Shake vigorously for 30 seconds, and pour (don't strain) cocktail into a coupe. Top with seltzer water, then garnish with a rose blossom and sprinkle of hibiscus tea.

It's just this sort of pretty little egg cocktail that really drives home why I garden the way I do: everything those crazy hens consume goes into their eggs, which almost exclusively go into my cocktails. I love knowing that every single ingredient in this drink, right down to that beautiful Prairie Organic Gin, are free of contaminants.

I like my judgey chicken side-eye completely organic, thank you very much.
