Piña Colada Fizz

I am a Piña Colada slut.

There. I said it.

I would drink those damned things all day, everyday if it wouldn't most certainly kill me. I mean, let's be honest: just one, typical PC has a week's worth of calories. And sugar.

But that doesn't mean I never drink them. Because: Piña Coladas. It also doesn't mean I don't tweak the recipe to be a little less sinful and then drink a week's worth of calories from several of those. Priorities.

 

P I Ñ A   C O L A D A   F I Z Z

To make one fizz:

  • 2 oz. white rum

  • 2 oz. light coconut milk (See? Healthy.)

  • 1/2 cup frozen pineapple chunks (Kinda healthy.)

  • 1 oz. pineapple jam

  • 1 fresh egg white (Very healthy.)

  • 1 oz. low-calorie naturally sweetened coconut drink like Bai Molokai Coconut (or sweetened coconut water)(Coconut water is the liquid essence of healthy).

  • 1 oz. prosecco (Because: Fizz)

  • 5 drops Angostura bitters

Add all ingredients to a blender, except bitters. Blend until smooth and frothy (put the lid on the blender first, mmmkay?). Pour into glass, garnish extravagantly, and drop bitters artfully across the foam.


 

Let's all just take a moment to acknowledge that this drink probably isn't much healthier than a normal Piña Colada. #realtalk

As always, guard your extravagant garnish. Even with an elaborate wall of paper parasols set up to distract her, she still only wanted the drink garnish.
